A common side is 'arroz rojo' or 'arroz a la mexicana', which is rice cooked with tomato, onion, and garlic, giving it a characteristic red color.
Spain is famous for 'paella', a complex rice dish. Note that 'paella' is a specific meal and not just a generic term for rice.
